Stauning Whisky, founded in 2005 on the West Coast of Denmark, with a focus on traditional methods. Floor malting is a rare traditional method of malting grains in small batches. This method, the brand believes, offers better grain control, producing a whisky with genuine character and rich flavor, and capturing the flavors of Denmark’s west coast. Very few distilleries floor malt 100% of their grains.

I am chasing away the chilly weather with a phenomenal pour of Stauning Danish Whisky. Denmark is a favorite destination of mine, having spent time there when I lived in Europe many years ago. There is something about the smell of this whisky that reminds me of the summer days I spent outside of Copenhagen.
The expression I chose tonight is Stauning’s US Limited Edition Sherry Cask Finish Rye Whiskey. 101 proof / 50.5% ABV | Double-distilled in small, direct-fired pot stills.
Only 800 bottles were the distillery’s release, and I am fortunate to own one. Aged in hand-selected Pedro Ximénez PX and Palo Cortado Sherry casks from Jerez, Spain. You might already know that I am going to be excited about this whisky because of the finishes. I’ll say it again. I love sherry and I love sherry and whiskey. This whisky is made with 100% local Danish grains - rye and barley. Another exciting component of this whisky is the floor malt. Some believe that floor malting results in richer and more complex flavors. I’m no expert but I can say that I get excited about this process and whether it’s the slower germination, or it’s all placebo, I don’t really care. It’s delicious! Are you a fan of Stauning Whisky? Tasting notes:
Nose: A big punch of vanilla bean followed by sweet floral honey with wet earth
Palate: Orange peel, fresh cut herbs, sweet grains, stone fruits and citrus mid palate. The finish is sweet and smokey, with a delicious sweet mash and oak ending.
